Rebecca & Peter's Ocean-View Wedding Cake
I do love a returning customer. There is something particularly special about having someone come back to you for one of the biggest celebrations of their life.
Rebecca had previously experienced one of my cakes for a birthday a few years ago — and she loved it enough to know exactly who she wanted to create her wedding cake. Me!
When Rebecca and Peter began planning their wedding at Fort Scratchley in Newcastle East, Rebecca already had a good idea of the style she wanted. She had seen a wedding cake I had created previously and loved the design, so we used that as inspiration for her own Cake Dreams. And then, as always, it was time to turn that inspiration into something that was completely theirs.
A Classic Semi-Naked Wedding Cake
Rebecca and Peter chose a beautiful two-tier wedding cake featuring the simplicity and elegance of a semi-naked finish. Each tier consisted of two thick layers of Vanilla Butter Cake, layered and covered in my signature White Chocolate Italienne Meringue Buttercream, finished with a beautiful semi-naked effect.
The Cake
The result was elegant, understated and perfect for a wedding overlooking the ocean. And, of course, beautiful cake needs beautiful flowers — I liaised with Flowers By Grace regarding the floral design, ensuring the finished cake would work beautifully with the overall wedding styling. Because it's all in the details.
Taking Care of the Details
One of the things I love about creating wedding cakes is that my job doesn't simply finish when the cake leaves my kitchen. For Rebecca and Peter's wedding, I contacted the venue and arranged a suitable time to meet and decorate the cake on site, exactly as planned.
Perched above Newcastle East, Fort Scratchley overlooks the ocean — which, on this particular day, was being whipped up by the wind! The kitchen team were incredibly helpful, making sure there was coolroom space for the finished cake and taking a full briefing on how it should be cut so every guest could enjoy it.
Cake, Flowers & Ocean Views
Once everything was in place, the afternoon light created the most incredible shade of blue over the ocean as we photographed the finished cake overlooking the water. It was one of those moments where you stop and think: yep, that's exactly how it was meant to look.
"You did such an amazing job, and the taste of the cake was exceptional. Nadine produced exactly what I had asked for. She went above and beyond to deliver the cake and ensure it was presented how I had asked."
— Rebecca
And Lauren from Fort Scratchley was equally lovely: "Hope to see you in our venues again soon. If any future client asks for a cake supplier, I will send them your way."
Rebecca trusted me with a birthday cake. Then, when it came time for her wedding, she came back to me. That's the greatest compliment a Cake Queen can receive.
